In Oaxaca City, market meals are the way to go, and you have plenty to choose from. When visiting, make sure to try the local dish — mole negro. It’s essentially a dark sauce made from smoked black chillies, prunes (or raisins) and chocolate. You’ll usually eat it with chicken and a side of rice.
