Abuela's Quesadillas

After six months of adventuring across Mexico, San Mateo indisputably claims the top spot as my favourite destination for its tranquillity and nature. You’ll find cabins with their own fireplaces scattered across the foothills of the Sierra Sur, where the population sits at a modest 4,000 people. Leafy hiking trails peel off in every direction, with cascading waterfalls and fresh mountain air highlighting the experience. Interestingly, in San Mateo, many restaurants operate out of the back of local family homes, as was my feast in Comedor Del Bosque's charming and colourful garden. And, without a doubt, this is the best quesadilla I’ve ever eaten!
